CHRASHFIT PORTOBELLO PIZZA

We all are guilty of wanting the best of both worlds. We want to have fit, lean bodies that turn heads on the beach and at the same time not have to live off of salads with no dressing and the same old grilled chicken. Use a juicy, meaty Portobello Mushroom cap instead of your normal calorie filled dough. It’s a great way to satisfy your desire for taste while maintaining a health conscious diet. Try our Chrashfit Portobello Pizza recipe for a guilt-free, nutritious & delicious twist on your favorite cheat meal.

What You’ll need:

  • 4 large Portobello mushrooms
  • 3/4 cup marinara sauce ( or pasta sauce if you want a richer flavor )
  • 1 cups spinach ( diced or shredded )
  • 1 cup grated part-skim mozzarella cheese
  • 1 tbsp. Parmesan cheese
  • 1 tsp. minced garlic
  • 2 tbsp. olive oil
  • ⅓ cup chopped olives
  • 12 slices pepperoni (or turkey pepperoni)*optional

Instructions:

  1. Pre-heat your oven to 375 degrees. Remove the mushroom stems and scrape out the gills under the caps. Coat the mushroom caps liberally with your olive oil.
  2. Place the mushroom caps, top side down, on an ungreased baking sheet and sprinkle on the garlic and Parmesan cheese as desired. Bake for 10 minutes.
  3. Remove the baking sheet from the oven and spread the marinara sauce on the mushrooms. Top your mushroom cap with spinach, cheese, pepperoni and olives. Bake for an additional 10 minutes, or until cheese has melted.

Try using pesto sauce instead of marinara, dice up peppers and onions for a twist and experiment with your favorite meats and toppings to make this healthy Portobello Pizza recipe your own.  Never feel guilty about eating pizza again.  The Portobello Pizza recipe is Gluten Free and can easily be adapted for not only vegetarians but vegans as well.
