Paleo Diet Recipe: Avocado-Bacon Omelet

This Paleo Diet Recipe for an Avocado-Bacon Omelet is the perfect way to start your day and keep you satisfied. The Paleo Diet is a diet based on the types of foods believed to have been eaten by our early human ancestors. Yields 2 servings

Ingredients:

  • 4 bacon slices
  • 1 avocado
  • 2 tbsp diced fresh scallion
  • 2 tbsp minced red onion
  • hotsauces2 tbsp minced fresh cilantro
  • 1/8 tsp sea salt
  • 1 tsp olive oil
  • 1 tbsp hot sauce  (Frank’s Red Hot, Tabasco Brand Habanero Sauce, Tropical Pepper Co.  XXXXtra Hot Habanero Pepper Sauce and Trader Joe’s Habanero Hot Sauce are all Paleo approved)
  • 4 eggs
  • 4 egg whites

Preparation Instructions:

  1. Cook bacon on medium heat until crispy and free of visible fat (drain it and crumble when done)
  2. Cut your avocado in half, remove the pit and scoop the avocado flesh into your bowl.
  3. Mash the avocado to your liking – We recommend leaving a nice bit of texture.
  4. Add onion, cilantro and crumbled bacon to avocado.
  5. Whisk your eggs together with the olive oil and sea salt.
  6. Make your omelets, one at a time.
  7. When the omelet is cooked spread one half of the avocado mixture inside and fold.

*Garnish with Thai peppers and sliced tomato for a fresh and spicy twist or add mushrooms to get a little variation in taste and texture

Nutritional information per serving : 420 calories; 32 g fat; 24 g protein; 9 g carbohydrate; 4g fiber.
